Wheat-Free Peanut Butter Cookies

 These are the ingredients you need: 2 Tablespoons melted butter, 1 1/2 cups peanut butter (natural creamy style is the best), 1/4 cup splenda brown sugar, 3/4 cup splenda, 2 teaspoons vanilla, 1 egg, 1/4 teaspoon baking powder, 1/4 teaspoon baking soda, 1/4 cup flax seed.
 In a bowl mix the butter, peanut butter, and the splendas.  Cream those ingredients together.  Then add the egg and the vanilla, and the baking soda, baking powder and flax seeds.  Mix batter till it is all blended together. Then place them on a greased baking sheet and put them in the oven for 10 minutes at 350' F.
I love to eat these guys as an ice cream sandwich using Vanilla Carb Smart Ice Cream by Bryers.  That ice cream can be expensive when it is not on sale.  I only buy it when it is on sale, however you could use and sugar free ice cream as long as the carbs are relatively low.  Enjoy!

Cheese Enchiladas

 Don't be intimidated, but this recipe calls for a little effort...not much. :) But it is worth it for restaurant style enchiladas.  Fill a small frying pan with about half a cup of crisco veggie oil or canola oil. Place it on medium.

 Then, gently place corn tortilla in the pan.  Let it soak for about 15 seconds on each side. Enough to get pliable.  Do each tortilla this way.  I make about sixteen of them.
 When they are done, place them on a plate and stack a paper towel in between each set of tortillas to soak in the oil.

 While the tortillas cool down, get about 2 cups of shredded cheese, I like cheddar, some chopped up green onions, and enchilada sauce (green enchilada sauce is the best for this recipe I just didn't have any).
 When the tortillas are cooled, sprinkle a little bit of cheese and a dash of the onions in the tortilla.
 Now wrapping these babies can be tough, just don't expect perfection.  Fold in two ends slightly, like an envelope.
 Then, roll the opposite ends all the way up like a cigar.
 They will want to pop open, but if you place them in the pan close together they kind of sandwich each other in.
 I usually place them in two rows on a greased 8x10 inch pan.
 Pour the enchilada sauce over the enchiladas just enough to cover them.  If you like the sauce, go ahead and use all of it.
 Last step, sprinkle about 1 1/2 cups of shredded cheese over the top and add some more green onions.
 Pop these bad boys in the oven for 30 minutes on 350' F.
 Let them cool and then dig in. YUMMM!

Homemade Spaghetti

Brown a chopped onion in olive oil and then add a chopped clove of garlic.  Let it cook on medium heat for only a minute (garlic can burn fast and ruin everything).  Then add your meat (ground beef or ground turkey-I use turkey).
 After your meat is browned add a chopped up carrot, zucchini, and yellow pepper.  I threw in a chopped up tomato as well.
 Then, add about two teaspoons of Italian seasoning and I always add a little more basil or oregano for good measure.  Make sure you add some salt and pepper to taste as well.  I add about a teaspoon of salt and a quarter teaspoon of pepper.
Once the seasoning has been added I throw in a can of tomato sauce, or in this case, a can of tomato paste with about a cup of water.  Then, add about a tablespoon of splenda and if you have some, a tablespoon or two of cream cheese (yummy buttery taste).  My kids like this served over wheat pasta, I myself eat it alone with cheese sprinkled on top.  Because of the hearty veggies it is totally filling and satisfying.  Enjoy!

Teryaki Chicken Stir Fry

 Teryaki Chicken is a great way to get your veggies in a meal.  And the right kind of veggies is what makes it taste so good.  For a good stir fry, make sure you have a yellow pepper, some broccoli and sugar snap peas.  You can find sugar snap peas somewhere around the salad mixes usually, at Walmart.  They are very well priced too, not too expensive. 
The first step is to brown 1/2 of an onion in a large pan with olive oil.  Then add 5 chicken breasts cubed.  Cook them all the way through and then pour them into a bowl off to the side.  Next, you want to add chopped carrots, celery, yellow pepper, broccoli, snow peas (not chopped) and garlic.  Brown them till tender.  Meanwhile, in a cup, stir 1/3 cup of splenda brown sugar with 3-4 tablespoons soy sauce.  When stirring it all together it should be a liquid.  Then, when the veggies are all cooked, add the chicken and onions back in and throw in the soy sauce mix.  Stir it all together and serve either alone or over brown rice.  Very yummy!

Caramel Corn

 Our usual yummy treat on a Sunday evening is usually caramel corn.  It's fast, easy and super good.  All you need is some butter, Splenda brown sugar, popped popcorn and heavy whipping cream.
 First, on medium heat place 2 tablespoons of butter in a pan.  Then add 1/4 cup of brown sugar (splenda).  Let that bubble as you stir for a few seconds.  Then add 2 tablespoons heavy cream to the pot.  This makes the mixture turn from a dark brown to a caramel color.  Keep stirring for another minute, then take it off the heat.
 Pour mixture over popped popcorn and mix around in the bowl till all popcorn is covered.

German Sausage Dinner

 Once again, a very simple meal here.  You need two cans of cut green beans, half an onion, and one package of Polska Kielbasa. 
 Brown the onions with a little bit of olive oil.  Then toss in the green beans and sausage.  Sprinkle with dill weed seasoning for that German flavor and then cook on medium heat for about fifteen minutes. Don't take it off the heat until some of the sausage is slightly burnt 
(the sweetness in the onions come out when done this way).

Taco Salad

 Taco Salad is a great, fast, easy dinner to make and guess what?  It is wheat free, yea!
 In my taco salad I like to use ground turkey because studies show that red meat can possibly lead to cancer.  Who knew?
I just make typical taco meat, place it on a bed of greens (spinach if possible because it has so many nutrients) and top it with corn tortillas, cheese, tomatoes and sour cream.  That's it, dinner is done!
