Thaw a couple of chicken breasts or chicken tenderloins in a bowl of water in the microwave till tender.
Fry the chicken in a pan with a tablespoon of olive oil till golden brown.
The dressing is the yummy part. Mix together a half cup of mayo with a teaspoon or two of mustard. Then mix in a teaspoon or two of honey and a quarter teaspoon of onion powder.
The chicken looks nice and done!!
Wha-la!! Place the chicken on a bed of spinach and the dressing goes best on top of the chicken or off the the side to dip in. If the dressing goes directly on the spinach, it gets a little soggy. Also, I thought some crunched up bacon would go very well on top of this and maybe even some fresh onion slices. Mmmm...
