Not Your Mama's Pancakes

 These pancakes are delish!  And they are wheat free!  All you need is 1 oz. of cream cheese, 2 eggs, 1 cup shredded cheddar cheese, 2 tablespoons heavy cream, 1/2 cup flaxseed meal, 1/4 splenda, and 1/2 teaspoon baking soda.
 Soften the cream cheese in the microwave.  Then, add the 2 eggs and whisk together till mostly blended. 
 Add the cheddar cheese, heavy cream, flaxseed meal, splenda and baking soda next.  Mix it all together and let it sit a minute.

 Turn the stove on to medium and coat with cooking oil.  The pan should be nice and heated when adding the batter. 
 Make sure to watch these babies carefully so they don't burn, hence the medium to low heat.  Cover them while they cook on the first side kind of like you would sunny side up eggs.

 When cooked they should look like this...mmm...even my kids love these.  My favorite way to eat them is doused with whipping cream and strawberries (I just didn't have any strawberries for the photo).
