This is my favorite snack in the "whole wide world"! It's salty, it's crunchy, and has good fiber for you so you don't feel quite as guilty when you eat the entire bowl. Oh wait, that last part is me...
Pour enough canola or vegetable oil in a 2 quart pot to cover the bottom. Then pour enough white kernal popcorn (yes, I like white kernal the best) to cover most of the bottom in the pot. Sprinkle a good amount of salt in after that (maybe a quarter teaspoon).
Cover the pot with a lid and stand there waiting. Yes, you must stand there waiting because this little guys will talk to you. When the oil gets hot, the kernals start chatting. And the chat and chat and chat and then slowly...they start to get really quiet and when it sounds like the last guy has said his peace and everyone is pretty much done, you take it off the heat and pour it into the bowl. This stuff can burn quick if you try and make sure all the kernals get popped. My rule of thumb, I would rather have a few uncooked kernals than everyone cooked and burnt popcorn to go with.
The reason I put this recipe in this blog is because homemade popcorn on the stove tastes sooooo much better the the stuff from the microwave. And sometimes, on a special occasion, like movie night, I use Orville Redenbacher topping and pour it over my popcorn. This stuff is kind of pricey, so again, only on special occassions. Oh, and it's probably not that good for you, either. Enjoy!
