Start with some butter in a pan. (I know, I use butter a lot, but I think it all depends on what you use butter with. If you use it with high glycemic foods then yeah, I think it can pack on pounds. However, if you use it on vegetables and low glycemic foods it doesn't sit in your body the way it would otherwise. I am not a doctor, but that is what I have found true for me.)
Then, place a CORN tortilla in the frying pan and sprinkle shredded cheese on top (I use cheddar). Make sure you cook it on a medium heat so it can cook slowly without burning.
Wait a few minutes, then take it off the heat and top with sour cream and chives. Because corn can have a lot of carbs in it, I only allow myself one of these good puppies. (And they are good!) This is usually something I eat at lunch time with maybe a salad or fruit on the side. Enjoy! :)
