Teryaki Chicken Stir Fry

 Teryaki Chicken is a great way to get your veggies in a meal.  And the right kind of veggies is what makes it taste so good.  For a good stir fry, make sure you have a yellow pepper, some broccoli and sugar snap peas.  You can find sugar snap peas somewhere around the salad mixes usually, at Walmart.  They are very well priced too, not too expensive. 
The first step is to brown 1/2 of an onion in a large pan with olive oil.  Then add 5 chicken breasts cubed.  Cook them all the way through and then pour them into a bowl off to the side.  Next, you want to add chopped carrots, celery, yellow pepper, broccoli, snow peas (not chopped) and garlic.  Brown them till tender.  Meanwhile, in a cup, stir 1/3 cup of splenda brown sugar with 3-4 tablespoons soy sauce.  When stirring it all together it should be a liquid.  Then, when the veggies are all cooked, add the chicken and onions back in and throw in the soy sauce mix.  Stir it all together and serve either alone or over brown rice.  Very yummy!
